On Sunday, 27-Jan, Chef Clay Alling of the Conservatory at the Jailhouse Saloon in Old Town Spring and Sydney Porter of Southern Yankee Beer Co teamed up to bring 31 of SYBC’s best customers a four course, five beer pairing experience. SYBC’s brews are always made here in-house, but it wasn’t until Sunday that we had a full kitchen dropped into the brewery space to cook on-site for the event.
The evening began with a Maine Lobster Bisque paired with our Shrubbery Kiniggit Blackberry Wit. Sydney launched into teaching the group the basic three steps of beer tasting: 1) Take a deep whiff by sticking your nose in the glass, 2) Take a sip and swallow, and 3) Take another sip and this time after swallowing, breath out through your nostrils.
The meal continued with a pour of the RedX Express Red Rye Ale combined with Gruyere and Caramelized Onion with Prosciutto-wrapped Mozzarella Toast Points, drizzled with a sweet Balsamic Vinegar. Consensus was this was the best pairing of the evening.
The main course of the evening was a Choco-Chile Rubbed Filet, Charred Veggies & Potatoes Bravas, paired with both the Joose Pop Juicy IPA and a Honey & Jalapeño Saison. The saison was brewed especially for the pairing dinner as a small-batch R&D brew; sporting the flavor of the jalapeño with none of the spice, it was paired up with the entree along with the Joose Pop in order to give guests the opportunity to compare and contrast the dueling flavors of beer along with the tender beef.
Finally, the brand new Caber Toss Wee Heavy Scotch Ale was paired with a Triple Irish Cream Brownie with Goat & Lavender Cream Cheese. The cream cheese was a delightfully light contrast against the chocolate of the brownie and the maltiness of the wee heavy. As the meal wrapped up, the crowd gave Clay and Sydney a big round of applause, as SYBC’s first beer pairing dinner had gone off without a hitch.
Everyone was full, happy, and perhaps a bit toasted! We’ll definitely be doing another beer pairing soon, so keep your eye out, tickets to this one were gone within a week!
